Turrets made from mashed potatoes with a spicy filling
Delicious side dishes to roasts and vegetables are usually a difficult matter. Either you rely on the all-purpose pasta or it gets really expensive. The following recipe shows you a surprising and simple method for an accessory that is guaranteed to generate enthusiasm!
For this you need:
For the sauce
- Oil for frying
- 1 chopped onion
- 1 carrot cut into small pieces
- 1 tbsp tomato paste
- 1 tbsp thyme
- 100 ml red wine
- 200 ml beef broth
- 6 g corn starch
For the mashed potatoes:
- 1,400 g cooked floury potatoes
- 100 g butter
- 100 g crème fraîche
- 4 egg yolks
- Salt pepper
- 1/2 teaspoon grated nutmeg
- Egg for brushing
That is how it goes:
1.) For the sauce, first fry the onion in plenty of oil. Then add the carrot and fry it a little. Then mix in the tomato paste and sprinkle the thyme over the mixture. Mix everything carefully.
Then extinguish everything with the red wine, bring the sauce to the boil and reduce a little and then pour in the beef broth. Cook everything together for about 20 minutes.
Stir the cornstarch into a little water and pour this into the sauce to set. Now let everything boil again together.
2.) Pour the sauce off through a sieve and then distribute the liquid into the wells of an ice cube mold. Then place them in the freezer.
3.) Now it’s time to prepare the mashed potatoes: use a potato masher to mash the potatoes and then add the butter, crème fraîche, egg yolks and spices. Mix everything carefully with a whisk.
Then fill the puree into a piping bag with a star nozzle.
4.) Squirt a circle of puree onto a baking sheet lined with baking paper. A sauce ice cube comes on top. Now spray mashed potatoes again around and on top until a turret is formed.
Repeat this with additional servings until all the ice cubes and the potatoes are used up.
5.) Now freeze the tray for 30 minutes and then brush the turrets with whisked egg.
6.) Now the whole thing is baked: The tray is placed in the oven at 200 ° C in fan-assisted mode for 25 minutes.
tip: Serve the pretty potato towers with glazed carrots as a side dish to a beef fillet.
