Delicious cake made from chocolate ganache, cookies and ice cream
Ice cream is one of the most popular desserts worldwide. But how about not enjoying the cold delicacy in a waffle, on a stick or in a mug? Surrounded with a creamy layer of chocolate, the dessert turns into a dreamlike ice cream cake in no time at all:
For this you need:
For the cookies:
- 100 g butter
- 110 g of brown sugar
- 100 g white sugar
- 1 pinch of salt
- 1 egg
- 1 tbsp vanilla flavor
- ½ teaspoon baking powder
- 160 g wheat flour
For the chocolate rim:
- 600 g dark couverture
- 200 ml of cream
For the filling:
Bundt pan 23 cm x 8 cm
That is how it goes:
1.) First mix together all the ingredients for the biscuits, except for the flour and baking powder. Only then do you add the flour and baking powder and mix everything into a creamy mass. Then place the dough in the refrigerator for half an hour.
2.) Then distribute the dough with the help of an ice cream scoop – alternatively you can also use two large spoons – in the shape of a ball on a tray and bake the biscuits for 14 minutes at 180 ° C in convection mode.
3.) While the biscuits are cooling, you can melt the couverture together with the cream in a water bath and stir again and again so that a creamy ganache forms.
4.) Now pour about 3/4 of the ganache into the ring cake pan and use a spoon to spread it evenly around the edges and in the middle.
5.) Then chop up the cooled biscuits with your hands and distribute the larger part of the crumbs in the mold.
6.) Now put the ice cream in the mold and sprinkle more cookie crumbs on top.
7.) Finally, spread the last quarter of the ganache on the ice and then put the whole thing in the freezer for 20 minutes.
8.) Now you can decorate the cold delicacy with the leftover biscuit crumbs.
While a piece of this ice cream cake melts on your tongue, you will feel as if you have arrived in taste heaven. Enjoy it!
